As a farmer, I have chosen to use the Holstein breed in my beef production for several reasons. Firstly, I believe that Holstein beef is more tender than that of the Angus breed. Although Angus beef is known for its marbling and tenderness, I have found that Holstein beef has a unique flavor and tenderness that I prefer.

Furthermore, while Holsteins may take longer to finish, I believe that it is worth the wait. Just as fine wine requires time to mature, I believe that Holstein beef benefits from a longer finishing period. During this time, the cattle consume more forage, which results in a more nutrient-dense product.

Additionally, I appreciate the efficiency of the Holstein breed. Holsteins are primarily known for their high milk production, and their meat production is often overlooked. However, I believe that the breed's high feed conversion rate and efficient growth make them an excellent choice for beef production.

In conclusion, I have chosen to use the Holstein breed in my beef production because I prefer the tenderness and unique flavor of their meat. I also believe that the longer finishing period results in a more nutrient-dense product. The breed's efficiency and high feed conversion rate further support my decision. Ultimately, my goal is to provide my customers with high-quality, delicious beef, and I believe that the Holstein breed is the best choice for achieving this goal.
