We price by hanging weight - that's the weight of the beef after harvest, before butchering. Our rate is a flat $8.45 per lb hanging weight. Here's what that looks like based on our actual herd averages:
Your whole beef price is capped at $5,000. If the animal comes in larger, the extra meat is on us. If it comes in smaller, your price drops accordingly. You'll always know before you pay.

When you buy a whole beef, every cut - Ribeyes, Filets, New York Strips - comes in at roughly $13/lb in your freezer. At the grocery store, grass-fed grass-finished cuts like these run $35-$60 per pound.
Here's how: you pay $8.45/lb on the hanging weight - the carcass before the butcher gets to work. After cutting, trimming, and packaging, you take home 60-65% of that as freezer beef. The exact yield depends on your cut choices - bone-in steaks and roasts retain more, boneless and trimmed cuts lose more. Either way, it works out to roughly $13/lb ($8.45 divided by 0.62 = ~$13) for every cut in the box.
